Banana Muffins


Mengidam dah lama tapi baru semalam berkesempatan nak buat. resepi I ambil dari "allrecipes".

Banana Muffins (source: allrecipes)

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 large bananas, mashed
  • 3/4 cup white sugar
  • 1 egg
  • 1/3 cup butter, melted

  1. Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
  2. Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
  3. Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped

Portuguese egg tarts


Make this last weekend, I got this recipe from "allrecipes", quite ok but a little bit too sweet for my taste. So if you want it to be less sweet, reduce the sugar amount.

  • 1 cup milk
  • 3 tablespoons cornstarch
  • 1/2 vanilla bean
  • 1 cup white sugar
  • 6 egg yolks
  • 1 (17.5 ounce) package frozen puff pastry, thawed

  1. Preheat oven to 375 degrees F (190 degrees C.) Lightly grease 12 muffin cups and line bottom and sides with puff pastry.
  2. In a saucepan, combine milk, cornstarch, sugar and vanilla. Cook, stirring constantly, until mixture thickens. Place egg yolks in a medium bowl. Slowly whisk 1/2 cup of hot milk mixture into egg yolks. Gradually add egg yolk mixture back to remaining milk mixture, whisking constantly. Cook, stirring constantly, for 5 minutes, or until thickened. Remove vanilla bean.
  3. Fill pastry-lined muffin cups with mixture and bake in preheated oven for 20 minutes, or until crust is golden brown and filling is lightly browned on top

Weekend activities

Salam, last weekend quite a busy weekend for me. Went to do some marketing, cleaning the house and of course cooking.
Yesterday went to MIL place to kepo-kepo nak tengok biras baru...hehehe.....Bukan apa, since my BIL bernikah dengan orang seberang, we all tak berkesempatan nak hadiri acara pernikahan dia yang diadakan di Bogor I guess... But since surat nikah dari sana was not authorised by S'pore govt., he has to nikah lagi kat sini. Tu yang hubby ajak I pergi sana nak bincang2 with they all about the majlis. MIL dah kata yang dia nak my hubby yang uruskan majlis tu nanti so sebagai menantu mithali....hehehe....perasan betul.....I ikut ajelahkan...and dia nak everything...I mean bersanding, kompang, berarak dan segala2nyalah....pening jugak memikirkannya kenapa dia tak suruh anak2 perempuan dia yang uruskan.....tapi tak kisahlah...jangan dia suruh I jadi mak pengantin sudah...tak rela I.....Anyway, layanlah hidangan yang I siapkan last weekend ni....

Butter rolls & Sup ekor lembu

Salam, today hubby not working, he took urgent leave. Still not feeling well since last week. Since he's home, I've decided to cook 'Sup ekor lembu' and butter rolls to go with it. Actually I've already posted recipe for the soup but I'll copy & paste......




Sup Ekor Lembu

1 kg ekor lembu, direbus hingga empuk (kita gunakan pressure cooker jadi cepat sikit)
1 labu bawang besar, dikisar
2 ulas bawang putih, dikisar
1 inci halia, dikisar
2 kuntum bunga lawang
4 biji pelaga
1/2 cawan oats
2 sudu makan rempah sup
4 batang celery, potong dadu
2 biji kentang, sebiji dibelah 4
2 batang carrot, dipotong kecil2
2 biji tomato, dibelah 4
garam
lada putih serbuk

Panaskan minyak dan tumiskan bunga lawang dan pelag
a. Masukkan bahan-bahan yang telah dikisar tadi hingga garing. Masukkan ekor lembu bersama air rebusannya sekali dan biarkan mendidih sebentar. Masukkan rempah sup dan oats dan kacau hingga sebati dan masukkan kentang, carrot dan celery masak hingga kentang empuk. Masukkan garam dan lada putih. Jika terlalu pekat tambahkan air, last sekali masukkan tomato.


Butter Rolls (source: allrecipes)

  • 2 1/2 cups warm milk
  • 4 teaspoons active dry yeast
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup butter, softened
  • 2 teaspoons salt
  • 7 cups all-purpose flour, or as needed
  • 1/2 cup butter, melted

Directions

  1. Pour milk into a large mixing bowl, and sprinkle yeast over the surface. Allow to rest for 5 minutes. Beat in the sugar, eggs, 1/2 cup butter, and salt; blend thoroughly. Gradually stir in the flour to make a soft dough. Cover bowl, and set in a warm place until dough doubles in size, about 1 hour.
  2. Punch down the dough, cover the bowl, and allow to rise again. Repeat this step two more times.
  3. Break off 2 to 3 inch size pieces of dough, roll lightly into round shape, and place in prepared baking dish, edges touching. Repeat to make 36 dough balls. Cover and let rise until doubled in size.
  4. Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  5. Bake rolls in preheated oven until tops turn golden brown, 10 to 15 minutes. When rolls are finished baking, drizzle melted butter over the top, and serve warm.

No title...

Salam, these few days I rasa malas je....nak buat apa2 pun asyik tertangguh je....Guilty conscious often creeps upon me for not being a good mother at this point of time. Aiman asyik tanya bila I nak start jahitkan pyjama untuk dia which I've promised to him way before ramadhan lagi.....Hmm..I pun sendiri tertanya bilalah I nak start buatkan dia....Apa2 pun, walaupun malas, masak tetap going on as normal. These few days hubby tak berapa sihat so bila masak tu...I kenalah masak ikut selera tekak dia tapi tak lupa juga untuk anak2. Normally if hubby is sick, he always prefer to eat soup or porridge which is not to the liking of the kids. Anak2 ni semua suka makan yang pedas2 so when I cooked vegetable soup for ayah, for them I cooked ikan sambal and when I cooked porridge, then it's pasta (yang pedas tau) for them....everybody pun happy kan...layanlah gambar2 kat bawah ni....

Cheese and Garlic Scones (2)


One of my children favourite snacks. Ever post this recipe before but this time I use parmesan cheese instead of cheddar and it taste much more better.


Cheese and Garlic Scones
Ingredients:
2 cups self-rising flour
2 tablespoons (60g) butter
1 cup shredded cheddar cheese (or parmesan)
1 teaspoon mince garlic (add more if you like or omit it if you don't)
1 cup milk



Directions:
1. Preheat oven to 425 degree F (220 degree c).

2. In a large bowl, sift flour. Rub in butter lightly with finger tips until until mixture resembles coarse breadcrumbs. Mix in garlic and cheese. Make a well in the centre of the mixture and pour in the milk. Gently mix, just until combined. knead briefly and lightly. Do not over knead the dough. Divide the dough into two balls.

3. Onto lightly floured board, pressed dough using your hand to form into 1 inch thick round and cut into 8 wedges. Place on lightly greased baking tins.

4. Bake for 15 to 20 minutes or until light brown.

Tahu Goreng



Buat tahu goreng for my hubby. oleh kerana pada ketika itu penyakit 'M' dah melanda....I guna kuah kacang instant je....hehehe
